Sherrill found this recipe at www.allrecipes.com last year when she was trying to expand her salsa repertoire.  This unique salsa has a little heat and a lot of crunch.

1 English cucumber, diced
1 large fennel bulb, diced
1 avocado, diced
½ red onion, chopped
1 banana pepper, diced
1 bunch cilantro, chopped
2 tablespoons honey
3 tablespoons fresh lemon juice
salt and pepper to taste

Combine all of the ingredients and allow salsa to sit for 20 minutes before serving.
