2 medium bulbs of kohlrabi, peeled and cut into 1/2” cubes
2 tablespoons olive oil
minced garlic (as many cloves as you like)
Toss the kohlrabi with olive oil in a large bowl. Add garlic, salt, and pepper to taste. Spread evenly on a cookie sheet and bake at 400 degrees for 30-40 minutes or more, stirring occasionally, until browned and very soft when pierced with a fork.
