For years, Ben Vanderweele and his daughter, Michelle, have been trying to figure out how to cure onions to store over the winter in Alaska. In warmer climates with longer growing seasons, onions are cured in the hot sun, in the fields. But in Alaska, we don’t have the luxury of those hot September and October days. Each week I'm so excited to read the Farmer's Market newsletter. Alison's newsletters are so inspiring, especially when I can't figure out what to do with all these summer Alaskan vegetables. When my refrigerator is bursting with greens and cabbage, I know just where to look for easy and delicious recipes. I've become more creative and adventurous since reading the South Anchorage Farmers' Market Cookbook. Some of my favorites are the salad recipes, red lentils with zucchini and the butterball potato salad with green beans.
